Beans are used

in a variety of dishes

, however, it is pre-boiled. Before cooking, the upper and lower ends of the shoulder blades are pinched off together with the stalks, and if there are fibers, they are freed from them, and then cut into pieces 2-3 cm long.

For cooking, the beans are dipped in boiling salted water (if not dipped in boiling water, the vitamins are destroyed) and kept on low heat while boiling for 15 minutes. Then it is thrown into a colander, and then used to prepare main courses, various salads, pickled or frozen. Freezing will reduce the cooking time to 3 minutes.

There are an incredible variety of recipes that include vegetable beans, we will focus on a few dishes that do not require much effort and time.

Beans with bell peppers

Green beans baked in sour cream

Boil the beans in the usual way, add salt and pepper, mix. Grease the form with butter, sprinkle with ground breadcrumbs. Lay in layers: beans, coarse grated carrots, beans, finely chopped onions and beans again. Lubricate the surface with a mixture of sour cream and egg. Place the dish in the oven and bake for about 30 minutes.

  • Smoked shank or ribs - about 1 kg

Remove the meat from the bones, put in a saucepan with a thick bottom, add the beans previously soaked in water, then pour in a little water and cook until the beans are tender. Once the beans are cooked, add the shredded cabbage, and after a few minutes add the diced potatoes and sauteed onions and carrots. Decorate the finished stew with herbs. You can do it without cabbage.

About the garden and food

Yesterday morning.
It was cloudy, cold and damp.
You walk on the wet, unmown grass, and, every now and then, with annoyance you step on the fallen, rotting apples that have been cut by birds.
Almost all the crops in the beds have been harvested, and we are slowly starting to prepare them for winter, digging in, removing weeds, adding compost, filling with mineral fertilizers, planting green manures. Three out of 9 beds are already ready.
I have to remove celery, leek, carrots, sorrel and one head of cabbage.
But, oddly enough, a new crop has also ripened for me.
These are daikon and green radish, parsley and cilantro, planted in mid-July in the garden after garlic.
I melted half a bed of green onions for a neighbor, for which I received a whole plate of pies with onions and eggs. I have not yet decided what to do with the rest of the bow.
And also my grapes are ripening.

Red bean lobio - a classic recipe

The classic lobio recipe is the pinnacle of Georgian culinary art. This is an incredibly tasty, hearty and nutritious meal. Every housewife can cook it for dinner and even for a festive table.

  • red beans - 500 g
  • onions - 4 pcs.
  • garlic - 2-3 cloves
  • utskho suneli - 1 tsp with top
  • coriander - 1 tsp with top
  • red pepper, hot - 1/2 tsp.
  • vinegar - 2 tbsp. l.
  • cilantro to taste
  • parsley to taste
  • vegetable oil - to taste
  • salt to taste.

1. Pre-soak the beans for 1 night.

2. Drain the old water, fill the beans with fresh water and send them in a saucepan to the stove over high heat. Bring to a boil, reduce heat to minimum and cook until tender for at least one hour.

3. Peel the onion and garlic. Cut the onion into medium pieces and send it to a preheated pan with a little vegetable oil. saute until light golden, lightly add salt at the end.

4. Grind the coriander in a mortar. Chop the garlic with chili, pre-cut into pieces, using a mortar.

5. Prepare a teaspoon of utskho suneli and 2 tbsp. l. vinegar in separate containers.

6. Pour 1 cup of liquid from a saucepan with beans. We merge the rest.

7. Transfer the beans to a separate container. We weigh our lobio and salt on the basis that 10 g of salt is needed for 1 kg.

Salting correctly is very important. Keep in mind that there will also be 200 ml of broth in the dish.

8. Lightly chop the beans (about 25% of the total mass) using a crush.

9. Add water from beans to chopped garlic and pepper, mix thoroughly. Pour all the spices there, pour out the vinegar and mix again.

10. Put the onion in the beans, pour out the spice mixture and mix thoroughly.

11. Chop the herbs and add to the salad, mix again.

Lobio salad is ready. Bon Appetit!

Winter Menu: Top 5 Bean Dishes

As you have already noticed, the winter diet is significantly different from the summer one. If in summer we enjoy an abundance of vegetables and fruits, then from late autumn to late spring food is usually less varied. The menu usually consists of cereals, root vegetables, cabbage, meat and fish dishes.

Legumes, in particular beans, also help to replenish reserves of vitamins in the cold season. The use of beans is in the balanced composition of its substances. It is rich in protein, which is equal in nutritional value to meat protein, essential amino acids, thanks to which dishes from it are well absorbed.

Depending on the type of beans, its grains have a high content of minerals: calcium, magnesium, phosphorus, potassium and trace elements - zinc, sulfur, copper and others. Due to their high iron content, beans are beneficial for anemia. In addition, beans are rich in B vitamins, as well as A, C and PP. But beans are especially useful because they contain a large amount of vitamin E, which is an antioxidant and prevents the occurrence of diseases of the heart and blood vessels. The content of this vitamin in beans, together with vitamins A and C, helps to improve vision. When eating beans, the condition of the body improves, the blood is purified.

Various soups, mashed potatoes, stews, pie fillings, snacks and salads are prepared from grain forms of beans (dry and canned). We recommend that you diversify your daily diet with bean dishes. Prepare delicious and healthy meals with us!

The beans must be soaked in advance (for 10-12 hours). Then we boil it almost until tender. The success of the preparation of the blank depends on how well the beans are prepared, because, as noted, this vegetable is "explosive".

Peppers, onions and carrots should be washed, peeled and chopped. Cut the pepper into strips, the onion in half rings, and rub the carrots on a coarse grater. The use of food processors while preparing such items is a great time and effort saver.

Pour a little vegetable oil on the bottom of the pan intended for the main cooking and add a little bit of salt - this is required so that the mixture of vegetables does not burn.

Simmer the onions in a separate saucepan or deep skillet. To do this, pour all the remaining oil into it, put the prepared onion and bring it to softness over low heat, but do not fry it. It will take about 10 minutes.

After the onion is processed in this way, add chopped carrots to it and simmer the vegetables together for about 10 minutes.

Let's make the sauce... If you decide to use fresh tomatoes, then you need to grind them with a blender. Tomato paste is preferable because it does not contain grains and tomato skins, the presence of which in the finished product is not to everyone's liking.

Add sugar, salt to tomato paste (or chopped tomatoes), mix everything. If you took tomato paste, then add water to the container with it, bringing the volume to 1 liter, and mix well until smooth. When using fresh tomatoes, no water is needed.

Transfer the processed onions and carrots to the main saucepan and fill with the prepared sauce. By and large, if you have the right utensils, all cooking can be done in one container. That is, first pour all the vegetable oil into it, stew the onions, add the carrots, and then pour the sauce.

Mix everything well, add chopped bell peppers and 8-10 black peppercorns. Stir again, cover the pan with a lid and simmer all vegetables over low heat for about 10 minutes.

After all the vegetables are stewed, you can taste them and add salt or sugar to your liking. Now it's time for the beans. Pour it into a saucepan with other ingredients, mix well and simmer under a lid over low heat for half an hour.

It is important not to let our mixture burn, so you need to mix everything gently from time to time. If you feel that the vegetables are still burning, then you can add a little water so that the stewing process goes on.

At the end of cooking, add 1 teaspoon of vinegar essence and mix everything well. It is important not to let the mass boil so that the acid does not lose its properties.

We lay out the hot mixture in sterilized jars and seal with sterilized lids. Then we turn the cans over, wrap them thickly (so that the vegetables languish longer) and leave in this form until they cool completely.

Beans and chicken fillet salad

To prepare such a dish, you will need: 2 cups of boiled white beans, 1 large onion, 1 carrot, 300 g of chicken fillet, salt to taste, mayonnaise for dressing.

Peel the carrots and onions, cut the onions into thin half rings, chop the carrots on a coarse grater. Place vegetables in a skillet with vegetable oil. After 5 minutes, add the chicken fillet cut into medium-sized cubes, salt. Once the chicken is done, turn off the gas and let the ingredients cool slightly.

In a salad bowl, place the beans and fillets along with the onions and carrots, being careful to leave as much oil as possible in the pan. Season the salad with mayonnaise and stir.

Bean salad

Well, here, my friends, you can fantasize endlessly, and everything will be delicious and nutritious. I want to mention that beans and mayonnaise do not mix well with each other in terms of taste. Therefore, it is better to use vegetable oil for making bean salad, any: sunflower, olive, cottonseed, soy, whoever is used to what.

The basis of this salad is boiled beans. My grandmother added onions to the beans, fried with carrots in vegetable oil, a lot of green onions, dill plus salt to taste, and that's it. These are required ingredients. And be sure to fried onions with carrots. Roasting gives the beans a special yellowish hue and taste.

In addition to the main ingredients, I add everything that I have at hand to this salad: mushrooms, peppers, olives, tomatoes, sometimes grated cheese. Fresh cucumbers do not go, but pickles go very well, garlic. This salad is very satisfying.

Some of my friends first wrinkle their noses: "Fi, beans" - and after trying, they appreciate the merits of such a salad, discovering a gamut of new taste.
